Easy Chickpea Tacos
Have you ever had chickpea tacos? Well neither had I until a few weeks ago. Since I'm not a fan of hummus I didn't think I'd like chickpeas. One day I was sifting through some online recipes and came across this Brazilian Chickpea Stew and fell in love.
Chickpeas are a rich source of vitamins and fiber and have a good flavor that seems to take shape of the seasonings that you cook them in. That's why I chose to put them in a taco for a more healthier option than your traditional meats.
So here is an easy chickpea taco recipe that I created and costs way less than a regular taco meal. Enjoy!
Ingredients
1 can of chickpeas or garbanzo beans (drained)
1/4 cup of chicken stock (use vegetable stock for vegetarian/vegan option)
1 teaspoon of garlic powder
1 teaspoon of garlic pepper
2 cups of chopped lettuce
Corn or flour tortillas
Optional Toppings
-Pico de gallo
-Sour cream
-Shredded cheese
-Salsa
Instructions
-Saute’ chickpeas in a small pot with chicken stock, garlic powder, garlic pepper for 3-5 minutes on medium to low heat.
-Season to taste.
-Serve hot on a corn tortilla with lettuce and desired toppings and enjoy!
